Ingredients:

Flour / Flour – 2 cups, Yeast – a little less than 1 teaspoon,

System:

Cover the yeast with 1/2 cup of warm water for 5 minutes. If the yeast swells, you will know that the yeast is good. Mix all the dry ingredients well in a bowl. Heat the milk. Do not give too hot milk, it will boil the flour. Now put all the yeast in the flour. And little by little, make the yeast dough with warm milk. Give all the milk if necessary. Make a dough like a bread dough. Take a lot of time and make the soft dough well. Yeast should be softened like earlobe. Once the dough is ready, cover it with thick cloth or polythene and leave it in a warm place for 2-3 hours.

When the dough doubles in size, knead it again with a little oil. Now divide the dough into 7-8 pieces or as small as you want. Brush a little butter or ghee on the baking tray. Again, make round balls with your hands and place them in the tray. Now cover the tray with thick cloth or polythene for 20 minutes to 1/2 hour.

When the balls swell and double in size, brush egg white on top. Bake for 10 minutes at 200 degrees Celsius or 25-30 minutes at 180 degrees. Or bake at the same temperature you make pizzas/cakes/breads.

After baking, take it out and brush butter on top while it is still hot. This pav can be stored for 4-5 days.

Tips:

If the yeast bottle is new, use less amount of yeast.

If you want to keep the yeast well, keep it in the fridge and use it.

You can use butter and 1 egg yolk instead of oil to enhance the taste.

If you want to add egg yolk, add 2-3 tablespoons less water.

If the yeast is old, mix it with a little baking powder.

If there is too much yeast, it will give a bad smell, so it is better to give the amount of yeast.

Serving:

Serve with pao bhaji or chutney

Materials:

  • 1. Basmati/polau rice- 2 cups
  • 2. Hot water- 2 liters
  • 3. Cinnamon- 2 t
  • 4. Cardamom – 2 t
  • 5. Bay leaves – 2
  • 6. Cloves- 3
  • 7. Orange/Jorda color- 1/2 tsp
  • 8. Saffron- one pinch (soaked in 2 tbsp milk)
  • 9. Butter- 1/2 cup (you can add ghee if you want)
  • 10. Sugar- 2 cups (as per taste)
  • 11. Crushed almonds- 2 cups (wood almonds, cashew nuts)
  • 12.Dry fruits- a little more than 1.5 cups (raisins, glace cherries and other dry fruits can also be added)
  • 13. Milk- 2 cups

Method:

When the water gets hot, leave the rice, cinnamon, cardamom, cloves, bay leaves (1 each) and food coloring and saffron soaked in milk in the water.

When the rice is 75% – 80% cooked, drain the water.

Heat butter/ghee in a pan and add remaining bay leaves, cinnamon, cloves, cardamom. Fry for a minute and add chopped almonds, fold for at least 2/3 minutes.

Add sugar and milk, stirring until sugar dissolves.

Now add dry fruits and drained rice to it.

Cook on medium till the water dries up, too soon the water will dry up and become sticky.

Garnish with glace cherries, mawa or small rose berries as desired and serve delicious “Jorda”.
